Bopis Recipe

Bopis also know as Kandingga is popular for its very spicy taste that made from pig or beef's lungs and heart. Bopis is perfect for serving as an appetizer for beer, liquor, and other alcoholic beverage. Many people who love to drink love spicy food to cover the taste of the liquor. Bopis also served as viand where you can combine it with rice. Many people love to cook this food. Bopis is not so popular in any restaurant because of it's spiciness unlike to Sisig and Dinakdakan. Too little is known about the origin of Bopis, except that this dish was derived from the Spanish word "Bopiz". This article will show you how to cook Bopis in very easy way.

Ingredients:
  • 1/2 kilo pork lungs
  • 1/2 kilo pork heart
  • 1 tablespoon garlic; minced
  • 1 medium carrots; minced
  • 1 medium kinchay or celery
  • 3 pcs chili pepper (siling labuyo); minced
  • 5 tablespoons soy sauce
  • 5 tablespoons vinegar
  • 1 tablespoon annatto (atsuete) seeds
  • substitute: 1/4 cup catsup
  • Salt and pepper to taste
  • Cooking oil

Instructions:
  • In a stockpot, boil the heart and lungs to remove any impurities and odor.
  • Take it out from the pot and chop it into small sizes. Set aside
  • Sauté garlic and onion.
  • Add lungs, heart, and chili pepper.
  • Sauté long enough until no liquid is left.
  • Season with salt and pepper.
  • Add the carrot and kinchay.
  • Continue to saute until vegetables are cooked.
  • Add soy sauce, vinegar, and annato water, little by little while balancing it according to your taste.
  • Simmer for few minutes until dish is cooked. then Serve!
